
Delicious homemade basil Pesto - the Italian way

One of my favorite things about summer is the abundance of fresh herbs! They litererally make any dish tastier, more beautiful and ultimately healthier!
My favorite thing to do with all these fresh herbs is to make delicious pesto! It's especially good for the lazy summertime as you can prepare and store it while it offers a light dish, espacially welcome on hot days. I mostly use it for pasta but it goes very well with grilled vegatables, salads, eggs, bruschetta, pizza, sandwiches...., well I think you get the idea.
But before getting into preparing it, let me share an interesting fun fact about pesto:
Its name comes from the Italian word “pestare”, which means “to crush”. Once you have read our recipe below you well know why that name is very suiting:

Ingredients
While the number of ingredients needed to prepare homemade basil pesto is quite limited, it is important to buy them of high quality.
Try to buy them at you local farmers market, delicacy store or ideally grow them yourselves where possible.
- 1 cup of fresh basil leaves
- 1/4 cup freshly grated parmesan cheese
- 1/4 cup of Yolioo Caterina Olive Oil
- 1/6 cup pine nuts
- 1 large clove of garlic
- 1/8 teaspoon salt and pepper
Preparation
- Using a pestle and mortar (or a blender) crush the basil and pine nuts
- Then add the parmesan and garlic to the grinded paste
- Gradually pour in Yolioo Caterina and finish with salt and pepper.
Use your pesto with some pasta, on bruschetta, or to make pesto eggs. So simple, yet so delicious!
