Produced in 2020, Galileo is a premium organic extra-virgin olive oil obtained from a blend of the Frantoio, Leccino, and Pendolino varieties from Tuscany. After a neat start with hints of herbs and olives, Galileo develops notes of ripe fruit before terminating with a clear bitter expression of cardoons, typical from Tuscany. At sight, the oil appears shiny, green with light reflections.
